Azienda Agricola Paravella is a family-run winery located on the hills between Stradella and Canneto Pavese, in the province of Pavia, in the heart of Oltrepò Pavese. The Paravella family has been running this winery for over a century. Azienda Agricola Paravella was founded in 1907. Today it is led by Clementino Paravella with his sons Matteo and Nicolò, who joined the company in 2015.

The winery philosophy is the one we look for in the producers we host in our online wine sales site: passion for their land, qualitative production aimed at enhancing the products of their territory, specialization in the production of its typical wines, attention to detail and processing techniques with low environmental impact. We believe that these principles are essential to bring out the specificities of each wine and the biodiversity of each Italian wine area.

In the 18 hectares of cultivated vineyards and in the range of Paravella wines we find all these peculiarities. The Croatina grape variety is variously interpreted to give life to wines of the D.O.C. Bonarda dell'Oltrepò Pavese, both in sparkling version and in the less common still version; and it is based on two very rare wines that cannot be produced elsewhere: Sangue di Giuda and Buttafuoco. Among the other typical vines there are Merlot and, above all, Pinot Noir, which here finds a second "home". It is vinified both in the classic "red version" and in the sparkling version to obtain the famous classic method of Oltrepò Pavese.

Let’s return to the wine protagonist of our review. The "Violino" Bonarda dell'Oltrepò Pavese D.O.C. Paravella is made from 100% Croatina grapes, grown in the vineyards of Stradella, on steep hilly lands, well exposed and marly, fundamental to confer richness and complexity, body and structure to the wine. The winery follows the classic process for the production of Bonarda in a sparkling version, adopting modern and sustainable technologies.

Bonarda dell'Oltrepò Pavese D.O.C. "Violino" Paravella 2021 has an intense red color with evident violet reflections. The aroma is frank, clear and penetrating. We perceive intense vinous aromas and notes of cherries, blackberries and currants, which define the typical aromatic framework of red wines of this D.O.C. The taste is lively, with fine and evanescent foam, capable of giving freshness and lightness to the sip. This "soft" character coexists with an excellent softness and an important structure (14% vol.) that creates a balanced and harmonious "set of sensations".

It is perfect with cold cuts or cotechino. Excellent with pasta dishes with tasty seasonings based on meat.
