Mas dei Chini is a family-run winery, founded in 1906, in Segno, in Val di Non, in the municipality of Predaia, in the province of Trento. The name of the winery refers to the Jesuit missionary Eusebio Francesco Chini, known as "Padre Kino", who, in the seventeenth century, starting from Segno, came to Mexico and California, where he met and helped the local indigenous tribes, and where he contributed, as geographer and cartographer, to create the first accurate maps of these lands.

One of the distinctive features of the winery is the nineteenth-century farmhouse, surrounded by 7 hectares of land planted with vines, where the grapes from the various vineyards are processed and vinified and where the bottles produced are aged and stored. In total, the family-owned vineyards stretch over 20 hectares around the fertile hills of Trento.

The will of the Chini family has always been to produce wines with a strong territorial identity, following trends and characteristics of the Trentino terroir. International vines such as Chardonnay and Pinot Nero represent the most cultivated varieties, at the base of the Trento D.O.C. sparkling wines, around which much of the production of Mas dei Chini is concentrated. In the range of Mas dei Chini wines there are other labels from autochthonous vines of Trentino Alto Adige such as Lagrein, Teroldego and Gewürztraminer, or "international" bottles such as Chardonnay, Riesling, Cabernet Sauvignon ...

Inkino Trento D.O.C. Riserva Brut Carlo V Mas dei Chini is the top of the range production of sparkling wines Trento D.O.C. of Mas dei Chini. This is a Classic Method sparkling wine made from Chardonnay (60%) and Pinot Nero (40%) grapes, from the 2011 harvest, cultivated with the traditional method of the "pergola trentina" in Nassi di Cadino, 400 meters above sea level, on the border between the provinces of Trento and Bolzano. The grapes are vinified separately and then assembled at the end of fermentation. The wine ages for 8/10 months in Austrian oak barrels, before the second fermentation, and aging on fermentation yeasts for over 100 months!

As you can guess from these details on the production method, this wine has unique and special traits.

The Inkino Trento D.O.C. Riserva Brut Carlo V Mas dei Chini has a golden color, intense and brilliant, which anticipates that sense of elegance and refinement that can also be perceived to the nose and smell. The perlage is very fine and persistent, very lively. The bouquet of aromas ranges from the fruity sensations typical of Chardonnay, we recognize notes of apple and tropical fruits, through the spicy notes of Pinot Nero to the tertiary sensations of toasted bread, resulting from the long aging. The taste is full, creamy and soft, enriched by pleasant savory notes that strike and conquer the palate. In general, with every sip we perceive refinement and elegance, with a good structure (12.5%) that reinforces the complex nuances that characterize this wine.

In our opinion, one of those bubbles that make the meal more precious. It is perfect with important fish dishes or main courses of good structure. To be served for important occasions.
