The wine service is a very special moment. There are specific rules you should follow and mistakes you shouldn't make.

In this article, we have identified the 5 most common mistakes that are made by many people when they decide to serve and pour wine.

1. Serve all wines at the same temperature

Each wine, to express its organoleptic properties and qualities, requires a specific serving temperature!

The most common mistake is to serve white wines and sparkling wines at high temperatures (14/15 degrees) compromising their characteristic freshness. White and rosé wines should be served at temperatures between 10 and 12 degrees, while sparkling wines at a lower temperature, 8-10 degrees. Red wines should be served between 14-18 degrees to enhance their typical structure, body and alcohol.

To understand the effects on wine of its service at wrong temperatures you can do a little experiment: drink a sparkling wine at 14 degrees and then try the same sparkling wine at 8 degrees. You will notice a huge difference!

2. Serve the wine from the left

The side from which to serve the wine is a detail that is too often underestimated. The wine service should NOT be done to the left of the guest! It must be done to the right of the guest.

The explanation is logical: according to the rules of the mise en place, the wine glasses go to the right of the guest. If the wine glasses are placed on the right, the wine will also be served from that side.

Imagine pouring the wine from the left with the glass to the right of the guest. It would be very uncomfortable!

3. Pour the wine with your left hand

From the right and WITH THE RIGHT HAND. Another golden rule of wine service not always respected!

The hand to use to pour the wine is the right. Pouring from the right, the right hand is further away from the host. In this way, the person being served will not be bumped or bothered. The left hand goes behind the back.

4. Touch the glass with the neck of the bottle

Very common and classic: serve the wine and place the bottle on the glass in which it is poured. You shouldn't do it!

The bottle should be kept away from the glass. Bottle and glass must not be touched for hygiene reasons and to avoid damaging the precious wine glasses!

5. Overfill the glass

When we pour good wine, we often exaggerate and completely fill the glass, to be able to enjoy it in large quantities. We are making a serious mistake.

Pouring too much wine into the glass compromises its serving temperature, raising it and it does not allow the development of aromas. With white wines you don't have to go beyond half the glass. For more structured red wines, 1/3 of the glass is enough. In any case, never fill the glass completely!
