Produced using the technique of "double controlled ripening". Basically, a partial cut is made on the shoot supporting the grape clusters: the part closer to the trunk continues to ripen, while the farther part begins to wither. This process results in Garganega grapes with two levels of ripeness: one juicier, the other more concentrated. By combining them, this Soave is born with an incredible aromatic complexity without losing its typical freshness. Its color is intense straw yellow. On the nose, aromas of almond, dried fruit, white flowers, fresh fruit and a hint of honey emerge. On the palate, freshness and softness come together, perfectly balanced. The producer
The vineyards belonging to the Portinari family in the first decade of the 1900s were cultivated by third parties. Umberto Portinari began cultivating the vines at the beginning of the 80s gradually continuing the vinification process of the grapes produced. The company is divided in two plots of land: Ronchetto and Albare, which give two "Soaves" with very different characteristics. In the vineyard of Albare, Umberto applies the technique of "double maturing" or of the cutting of the shoot, which allows for a better structure to the wine. The cellar and the home are in Brognoligo, in the outskirts of Monteforte d'Alpone and completely surrounded by the viny hills.

How to serve it
The temperature of the service is 11-13°C, a large tulip shaped glass is advisable.
How to keep
It may be drunk while still young, but it is advisable to let it thin for a few years in a cool place with a constant temperature.
