Sauvignon Vigna Castel Ringberg Elena Walch 2020

Grown exclusively in the Castel Ringberg estate sited on a steep hillside with loose soils consisting of clay and sand deposited by the Adige river, interglacial and morainic origin. Only fully ripe grapes are selected and used. Before soft pressing the grapes get macerated for approximately 6 hours. The making process foresees clarification through must refrigeration. A part ferments under controlled temperature (18°C) and has a long contact with the yeast. The rest ferments in barrique. Assemblage take place shortly before bottling, followed by long maturation in the bottle. It shows elegant, youthful fruit, gentle, just adumbrated notes of gooseberries and fine herbs. Clear and straight in the palate, it is nicely fresh, well bodied, and persistent in the finish. Contains sulphites. The producer

Elena Walch is in charge of a company with vineyards that can be undoubtedly considered among the most beautiful in Alto Adige. The company is located in the former Jesuit monastery, owned by the Walch family since 1869, in Termeno (a small village 30 km from Bolzano). The town of Termeno is well known for its white wines, but especially for its Gewürztraminer (which is said to be born in this place). The estates of Elena Walch overlook Lake Caldaro and are divided into Castel Ringberg and Kastelaz. Their beautiful location is a major contributor to the high quality of the wines produced here.

How to serve it

It should be served at 12-14 degrees Celsius. The perfect glass is a clear, smooth and colorless crystal, goblet.

How to keep

The bottles should be laid horizontally in a cool, damp and dark cellar.
