This wine is made of pure Vermentino grapes selected from the best exposed grapevines, from a relatively clayey area and harvested in fractioned periods. This kind of harvesting produces various selections of grapes which when pressed delicately, give clean musts, with selected ferments, and which ferment at a low temperature (16-18°C). The wine, after the alcoholic fermentation, comes in contact with its ferments, which in turn give its aroma and character. The Cala Silente is bottled after a few months and after it's thinned in glass for several weeks it is then placed on the market. The colour is that of yellow hay, and the fragrance is that of pepper, elegant and refined. Contains sulphites. Produced by CANTINA SANTADI Sca - Via Giacomo Tachis, 14 - 09010, Santadi (SU) - Italy.

The producer

Founded in 1960 the cellar now has about 300 contributing partners with vineyards in the municipality of Santadi, Villaperuccio, Nuxis, Giba, Piscinas, Masainas, Sant'Anna Arresi, Perdaxius and Tratalias for a total of 500 hectares at altitudes of maximum 250 metres above sea level and descending sweetly down to the marine littoral. The climate is fairly dry in the summer period, but the marine breeze abates the temperature in the hottest months. There is rainfall during the autumn-winter period. It is perhaps for this reason that Sulcis red wines are full, rich and so generous. In this area it is possible to observe the marvellous sand, which allows for foothill cultivation and it is here that you can pick marvellous Carignano grapes of, which only the sapling without the rootstock can produce with exceptional organoleptic characteristics and superior to other grapes.

Goes well with main dishes, various fish plates and white meat.

How to serve it

It should be served at a temperature of 10-12 degrees centigrade. The perfect glass is a smooth and transparent crystal glass.

How to keep

Even though this is a wine that doesn't have to age, it conserves well for several years. The bottles must be placed horizontally in a cool, damp and dark cellar.

A floral and slightly spicy Sardinian vermentino. The palate is balanced, fresh and well structured, for a very elegant sip. The price is great! (Posted on 4/4/2023)
