Timorasso is an ancient autochthonous Piedmontese vine, so ancient that it is said to have been appreciated even by Leonardo da Vinci. In the second half of the 1800s, following the scourge of phylloxera, it had been practically abandoned. Only since the early nineties of the last century it has been rediscovered by skilled winemakers who started to vinify it in purity giving rise to great white wines for aging. The Cavallina is made entirely from Timorasso grapes, result of a meticulous research in the vineyard. The color is pale yellow, moderately bright and very clear. The undisputed elegance of fragrance plays on the floral tones and releases a scent of freshness and fair minerality. It tastes fruity, pleasant and well balanced.

The producer

Claudio Mariotto's company was founded by great grandfather Bepi. Grandfather Salvatore and father Oreste carried on the business. In the '90s, with the help of his brother Claudio and his mother Piera, Claudio gives continuity to the tradition and passion for the earth and wine handed down by his ancestors. He chooses to focus its interest on the production of Timorasso and Barbera in order to convey the value and quality rooted in its territory.

How to serve it

Serve at 10 degree centigrade in a transparent crystal, plain and colorless glass.

How to keep

The bottles should be placed in a horizontal position in a cool, dark and humid cellar.
