The training system is Arbour and the pruning system is Guyot. The production is about 1 kg of grapes per vine. There are about 4000 vines per hectare. The harvest time is the second week of October. The grapes are harvested in boxes containing 20 kg. After crushing, the fermentation and the maceration start and last 15 days. The vinification method is focused on the respect of the raw material, trying to understand each vineyard separately and strictly controlling the ripening of the grapes. The technology marries traditional methods such as to follow the moon’s phases during the work of racking and bottling. The harvest is exclusively hand-made to carefully select the best grapes . The must ferments in stainless steel tanks at controlled temperature. The must remain in contact with skins during maceration with the aim of obtaining the best aromatic expression , elegance and harmony of flavors . The color is garnet red with ruby highlights, the bouquet is intense with notes of cinnamon and vanilla and hints of cocoa and coffee. This Barolo is full-bodied and velvety, it is pleasantly tannic and well-balanced. Contains sulphites. Produced by Bric Cenciurio Azienda agricola - Via Roma, 24 - 12060, Barolo (CN) - Italy.
