Only grapes produced in the company's Villa vineyard are used in this red wine. The vineyard is situated in the area of Negar in the heart of Valpolicella. The harvest begins in the second week of September and the grapes are gathered in wooden trays and crushed after 40 days. The grapes are then left to wither until mid-February. Fermentation takes place in steel tubs under a controlled temperature of 25 degrees centigrade for about 21 days. The wine is then matured for four years, half in oak casks and half in "tonneau". After it has been blended, the wine is laid in bottles for three months before being put on the market. It is a strong red colour with a ruby reflection, and a spicy aroma that is reminiscent of jam and has a note of vanilla. It tastes full and warm with a slightly bitterish aftertaste. The producer

Mazzi is a rural company, located in the heart of Valpolicella in the area of the Negar denomination. Together with his sons, Stefano and Antonio, Roberto Mazzi takes personal care of the company's vineyards, which are called Calcarole, Poiega, Sanperetto and Villa. Although these vineyards are quite small, but located in a very favourable positions. Careful work in the vineyards and maximum care in the cellars form the basis of the wines produced by this company. Although the number of bottles produced is limited, production is concentrated on tradition and quality.

This wine can be drunk on its own or with significant roasts or game.

How to serve it

It is recommended to open the bottle at least an hour before serving and decant the wine into a large carafe so that it has a chance to air and its rotundity can be appreciated in full. The wine should be served at 18 - 20 degrees centigrade. The best glasses to use are clear, transparent crystal goblets.

How to keep

If kept well, this wine has an average conservation period of thirty years. The bottles should be laid horizontally in a cool, dark, humid wine-cellar.
