This spumante is the valued result of the careful and exclusive selection of Pinot Nero variety of grapes of the same year, which are grown on the hillside vineyards kept by the wine-maker. Produced in the traditional "metodo classico", this spumante is a light straw-colour with long-lasting bubbles. It has a fine and extremely elegant bouquet and a pleasant, lively taste with a clean, long-lasting aftertaste.

The producer

The wine-makers Bruno Giacosa have been producing and ageing wine for three generations. Their vineyards are situated high in the hills with a fortunate south/south-easterly exposure and a unique local climate, due to their position in a natural amphitheatre. Although the cultivation of the vines is conducted with scrupulous attention to the demands of tradition, certain modern practices, such as the thinning out and trimming of the vines, are not ignored. The yield of grapes reaches an average of 60-70 hundred kilos per hectare. Wine-making takes place in stainless steel tubs, which allow the fermentation temperature to be controlled by chilling apparatus. The red wines are then aged in French oak casks. If there are bad years, when the wine does not reach an acceptable standard of quality, it is not bottled.

This spumante is excellent with antipasta and dishes based on fish.

How to serve it

In order to appreciate this wine at its best the bottle should be taken out of the cellar and immersed for about half an hour in an ice bucket. The ideal temperature to drink this wine is 7-8 degrees centigrade. The bottle should be carefully uncorked making sure the wine does not gush out. The best glasses to use are clear, transparent crystal flutes.

How to keep

Like all spumanti this isn't a wine that improves with age and should be drunk within two or three years of purchase at the latest. The bottles should be laid horizontally in a cool, dark, humid wine-cellar.
