This red is made exclusively of Petit Verdot grapes grown in vineyards located 70 meters above sea level in the DOC Eloro area, in the Noto Valley. Refinement takes place over the course of 12 to 15 months, half of the time in French oak small barrels and the other half in steel vats. After that, the wine rests, bottled, for another 6-8 months. The colour is bright ruby-red, with shades of violet. The aroma is that of wild game and rich, ripe fruit. To the palate, the wine is extremely full and round, with great concentrations of fruit.

The producer

The Noto Valley is one of the most picturesque and historically significant regions of Eastern Sicily. This part of the DOC Eloro area, well known for its Nero d’Avola, is home to Le Mandrie and Gaudioso wineries, which have been owned for generations by the family of Barone Sergio. Today, under the management of Barone Giovanni Sergio, the estate has carved its own niche within the wine industry, becoming an example of the successful marriage of tradition and technology. The ancient settlements have been restructured and converted into state-of-the-art wine production centres. The vineyards surrounding the two estates have been unified into one body of land, with wall-style rows of vines pruned using the “cordone speronato” method. Density is very high, and production can be placed at around 7 tons per hectare. Techniques and statistics, however, only partially help to explain the quality levels reached by the Nero d’Avola and other wines in this area of Sicily. The soil’s characteristics and a generous climate have helped these grapes achieve their unique excellence.

Aside from traditional meat-based entrées, this wine is ideal for pasta dishes with game sauces.

How to serve it

To be served at a temperature of 18-20 degrees centigrade in smooth and colour-less crystal glasses.

How to keep

To be stored horizontally in a cool place, under controlled temperature conditions and away from direct light. The wine may successfully undergo several years of aging in bottle, with interesting potential for evolution.
