Metodo Classico Trento Doc Blanc de Blancs vintage, with 30 months refining on yeasts, obtained from Chardonnay grapes grown in vineyards on the high slopes around Trento and in the Cembra valley. Abundant foam forming a long-lasting crown, very fine continuous perlage. Pale straw coloured with greenish hues. The fragrance is very intense and variegated with delicate hints of mayflower and magnolia, fruity tones of mature golden delicious apples and peaches, interspersed with subtle notes of hazelnuts and lightly toasted bread. The taste is precise and harmonious, pungent and wholesome, well balanced and characterised by a fresh acidity that exalts the fruity sensations. The complex taste is notable, with a caressing effervescence and a persistent aftertaste of yeasts, sweet almonds and a pleasurable aromatic base, typical of Chardonnay.

The producer

After several years of research in constructing the project, Opera Vitivinicola in Valdicembra was formally opened in 2007 thanks to the initiative of two businessmen already affirmed in the building sector, and united by their passion for wine and their desire to valorise their land of origin. Opera Valdicembra is founded on three principles. First: the desire to spread the fame and appreciation of a territory which, thanks to its position in the foothills (soil, exposition, altitude, temperatures) can be considered elect for the production of grapes destined to Trento Doc. Second: the configuration of a network of small grape growers that respond to the criteria for selection and respect of the farming practice defined in the company’s by-laws. Third: the ambition to interpret in the best possible way the potentiality of the Classic Method, thanks to the selection of the best grapes from the most suitable zones in Val di Cembra and other areas chosen for Trento Doc and long resting on yeasts. The winery is in Verla di Giovo, the result of an architectural project to recover and extend Cantina Napoleone Rossi, the oldest winery in Val di Cembra, founded in the 1800s and closed only recently. The buildings blend into a landscape of great environmental value, characterised by the terraced vineyards extending along the length of the valley. The first production, of limited quantity, was that of the 2007 harvest.

Best with

Excellent as aperitif, a perfect match for many starters, risottos and fish dishes generally, ideal for the whole meal even as an extreme contrast.

How to serve it

We recommend serving at 8°C, and to remove the cork very delicately.

How to keep

This is not a wine that should be aged and is best drunk within one or two years of purchase at the latest. The bottles should be laid horizontally in a cool, dark, humid wine-cellar.
