Hand-harvest takes place when the grapes reach the appropriate levels of phenolics and sugar. Alcoholic fermentation takes place both in steel tanks and in oak casks. Malolactic fermentation takes place in new French barriques and in large oak casks, where wine is left to mature for 8-10 months. Finally Santambrà undergoes a 6-8 months period of bottle-ageing. Ruby red with violet tinges. Merlot notes of tobacco blend in with fruity hints of black berry that are specially typical of Sangiovese. Clearly focused, lush and deep.

The producer

The company is named after Gustavo Tiburzi, Cavaliere del Lavoro, founder and owner. It is located at Montepennino di Montefalco, approximately three kilometres from the historical town centre, in an excellent position in the heart of the DOC area. The company's vineyards produce only red grapes and are located at 405 metres above sea level.

This wine should be served at 18 degrees centigrade in clear, transparent crystal goblets.

How to keep

If it is kept well, this wine has an average conservation period of five to eight years. The bottles should be laid horizontally in a cool, dark, humid wine-cellar.
