This wine is produced with grapes coming from selected vineyards with a limited production of only 7.000 kgs. per hectare. The ideal location and exposure of the vineyards and their constant and careful maintenance favour the production of high quality grapes. During the harvest, which is entirely done by hand, the grapes are placed in cases in order to preserve the integrity of the fruit until the pressing process. The wine is obtained from a gentle pressing, followed by fermentation under controlled temperatures with a lengthy maceration process. Malolactic fermentation in the autumn helps the wine to stabilise naturally in large Slavonic oak barrels and in French oak casks, where it remains for 15 to 18 months, depending on the individual requirements of each year's vintage. After the bottling process the wine ages for at least 6 more months in controlled temperature and humidity conditions. It is undoubtedly one of Piemonte's noble wines. Ruby red in the color, it denotes an important structure and great balance; such qualities are enhanced by the aging process in oak casks and french barriques. The producer

The Ca' del Grifone estate extends within the municipal territories of the towns of Fontanile and Castelrocchero, in the Asti province, at an altitude of 350-400 metres a.s.l. Its lands, a single body currently totalling 18 hectares of D.O.C. and D.O.C.G. registered vineyards, are located along the gentle slopes typical of the hills of the Alto Monferrato d'Asti area. Each phase of the production activity is followed with great attention by qualified professionals who knowingly combine the piedmontese wine making tradition with the application of the latest technology, pursuing the ambitious goal of guaranteeing the absolute quality of its products.

How to serve it

To be served at room temperature. It is suggested to pour the wine in a decanter in order to allow it to breathe. For an ideal tasting use transparent crystal balloon glasses.
