VIP’s wines are always disgusting. This is what I thought of OT, but even when Toscani’s red wasn’t ready, after smelling and trying it, I said: it will be a great wine and I confirm so after new tests. How nice to be able to say that there are exceptions that confirm the rule!

The grapes are harvested, vinified and honed separately; it is only after a 16-month barrel period that they are blended after an attentive analysis of the evolution of each individual wine type. The main characteristic of this wine is its exuberant yet fine freshness due to ripe red fruits (cherries and redcurrant), coupled with a very complex mix of sweet spices (cocoa, cinnamon, and licorice), and pepper tones. Tannins play a very important role, but are never rustic. Round but not overwhelming, they contribute to an intriguing, smooth sensation that, coupled with the great persistency of the wine, predicts a long ageing plateau.

Producer Oliviero Toscani’s vineyards grow in an amphitheatre-like area, characterized by a very special soil condition. It is in fact poor in clay while rich of a granite disintegration skeleton. This characteristic, combined with a total south-west exposure, enables these vineyards to yield to a complex yet fresh wine. The choice of Syrah as the major component is meant to obtain a spiced, deep texture when blended with the minerality of the Cabernet Franc and to achieve color stability when mixed with the Petit Verdot percentage.
 Best with Excellent with roasts and game, perfect with mature and spicy cheeses.
How to keep it This wine can be aged for many years if it is kept in an optimal environment. The bottles should be laid horizontally in a cool, dark, humid wine-cellar.
How to serve it
It is recommended to uncork the bottle two or three hours before drinking. The wine should be served at 18-20 degrees centigrade. The best glasses to use are clear, transparent crystal goblets.
