This Chianti D.O.C.G. is the valued result of the careful selection of Sangiovese, Canaiolo, Malvasia Nera, Colorino and Merlot grapes. These are gathered by hand and a made into wine according to traditional methods.. The wine is then matured for at least twelve months in Slavonic oak barrels of an average to large capacity, and in French oak "tonneaux". After it has been bottled it is refined for a further three months. This wine, which is traditional in style, is generally produced in years when the grapes allow, and has a strong, fruity aroma, an average structure, and a good all round acid content. It is rounded and well-balanced. Contains sulphites. Produced by Azienda Agricola "Castello di Cacchiano" di Giovanni Ricasoli-Firidolfi - Loc. The producer

Cacchiano Castle was the property of the Ricasoli-Firidolfi Barons, one of the oldest families in Tuscany, until the eleventh century. The present owner of the company, Giovanni Ricasoli-Firidolfi, is a young wine-maker descended from one of the noblest and oldest Tuscan families. It was his ancestor, Baron Bettino Ricasoli (1809 - 1880) who, some 150 uears ago, laid down the formula for the production of a better Chianti, today's Chianti Classico. Since the origins of the Castle in Cacchiano, wine has been produced from grapes grown here. Yet it was only in 1974 that Elisabetta Balbi Valier, as requested by her husband, Baron Alberto Ricasoli-Firidolfi, began bottling the company's wines under the Castello di Cacchiano label. The Castle grounds extend into the southern part of the Chianti Classico production area. The cellars where the wine is aged are located underground in a splendid position, 500 meters above sea-level, with a panoramic view dominated by the Castle itself, which is today the family residence. 25 hectares of vineyards, of which about 21 are registered D.O.C.G. for the production of Chianti Classico, surround the caste at an altitude of 400 meters above sea-level. The young wine-maker, Giovanni Ricasoli-Firidolfi, has set himself the objective of maintaining the age-old traditions of the company, without dismissing out of hand the innovations offered by modern technology. The basis of his philosphy is inextricably linked to the importance of the land. Giovanni is convinced that the high quality of the finished product is the result not only of painstaking work in the vineyards, but also of a full understanding of the unique characteristics of the land, and, above all, of the unique characteristics of the harvest of any given year.

This wine is the perfect accompaniment to antipasta, first courses in light sauces, and second courses based on white meat, roast meat and even fish.

How to serve it

The wine should be served at 16 - 18 degrees centigrade in clear, transparent crystal goblets.

How to keep

If kept well, this wine has an average conservation period of four to five years. The bottles should be laid horizontally in a cool, dark, humid wine-cellar.
